Ingredients

  • 1 zucchini shredded~ 1 ¼ cup
  • 1 carrot shredded~ 1 cup
  • 2 eggs
  • ¾ cup parmesan cheese shredded
  • ½ tsp salt
  • ⅛ tsp black pepper
  • ⅛ tsp red pepper flakes (less or not at all if you don’t like spicy)
  • ¼ cup coconut flour
  • ½ tbsp. lemon juice
  • Garlic infused oil (for frying)

If you do not want to put cheese in then add another egg instead.

Instruction

  1. Combine all ingredients in a medium bowl
  2. Turn frying pan/skillet to medium/high heat and let it get nice and hot before adding oil
  3. Form batter into 6 patties and pan fry until both sides are nice and crispy Make sure to use plenty of oil or butter this will help the patties to brown
